A menu of gastronomic delights will fly to the ISS

The cosmonauts’ menu does not include lobster, haddock, or foie gras. Instead, astronauts are typically offered freeze-dried foods that are traditional for space missions. However, a French guest aboard the ISS will enjoy gourmet dishes. The menu is being developed by astronaut Sophie Adenot in collaboration with award-winning French chef Anne-Sophie Pic, as reported by https://xrust.ru/. Together, they are creating a menu of gastronomic delights that Adenot will send to the ISS next year. Instead of the usual freeze-dried nutrients that astronauts consume, the 42-year-old Adenot will have dishes to choose from such as “Foie gras cream on toasted brioche” and “Lobster bisque with crab and cumin.” The menu, dubbed by the European Space Agency (ESA) as “a taste of France in space,” includes four appetizers, two main courses, and two desserts. Adenot noted that the dishes, which also include stewed beef and chocolate cream, will not only please the taste buds but also help her feel connected to Earth and her homeland. According to ESA, strict rules about food apply on the ISS: it must be crumb-free, lightweight, and have a shelf life of at least 24 months. For this reason, most dishes are canned, vacuum-packed, or freeze-dried, while fresh fruits and vegetables are a rare luxury only available when a spacecraft arrives with new supplies. However, to maintain interest, boost morale, and foster camaraderie among the crew, about one in ten meals is specially prepared for each astronaut, with these “bonus meals” often created in collaboration with a chef. The 55-year-old Pic, known for her haute cuisine, holds the most Michelin stars among female chefs worldwide — 10 in total. According to her, this project pushes the boundaries of gastronomy as she and her team worked on creating unique dishes while adhering to technical constraints. Adenot stated that she plans to share the gourmet cuisine with her colleagues onboard — after all, it’s a significant milestone: French gastronomic culture is becoming extraterrestrial for the first time.

Adenot, a former helicopter test pilot and rescue aviator, has earned several awards, including a medal recognizing her efforts in promoting gender equality in science.
